Ingredients
  

Zucchini and Cheese Filling

  • 1 pound zucchini or summer squash, trimmed
  • 1 ¼ teaspoons fine sea or table salt
  • 1 cup coarsely grated gruyere cheese
  • ¾ cup coarsely grated fontina or provolone cheese
  • ¼ cup finely grated parmesan or pecorino cheese
  • freshly ground black pepper

Bread and Butter

  • 8 slices bread of your choice country-style white bread is suggested
  • 2 tablespoons softened butter or olive oil for brushing bread

Instructions
 

Preparation

  • Grate the zucchini using a food processor or box grater. Toss with salt and let stand for 20 to 30 minutes until wilted. Drain and squeeze out excess water.
  • Mix zucchini with grated cheeses and freshly ground black pepper. Adjust salt if needed.
  • Brush the outsides of the bread slices with olive oil or softened butter. Spread the zucchini-cheese mixture on the insides and close the sandwiches.

Cooking

  • Grill the sandwiches on a griddle or skillet until golden brown and the cheese is melted.

Notes

Feel free to use different types of bread and cheese as desired.
