Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz) white beans, drained & rinsed
  • 1 can (4 oz) diced green chilies
  • 1 can (15 oz) corn kernels, drained
  • 4 cups chicken broth
  • 1.5 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon chili powder
  • Salt and pepper, to taste
  • 1.5 lbs boneless, skinless chicken (breasts or thighs)
  • 0.5 cup sour cream or Greek yogurt
  • 1 juice of lime
  • Fresh cilantro, chopped (garnish)
  • Sliced jalapeños (optional)
  • Lime wedges, for serving

Instructions
 

  • Warm oil in a large pot over medium heat. Sauté onion until soft, 3–4 minutes. Add garlic; cook 30 seconds.
  • Stir in cumin, oregano, and chili powder; toast 30 seconds.
  • Add broth and chicken. Bring to a simmer; cover and cook until chicken is cooked through, 15–18 minutes.
  • Remove chicken to a board; shred with two forks.
  • Return shredded chicken to the pot. Add beans, green chilies, and corn. Simmer 8–10 minutes to thicken.
  • Off heat, stir in sour cream (or yogurt) and lime juice. Season with salt and pepper.
  • Serve hot. Garnish with cilantro, jalapeños, and lime wedges.

Notes

For extra creaminess, mash ½ cup of the beans before adding. Mild heat as written; add jalapeños or a pinch of cayenne for more spice.
