Ingredients
  

Rice and Meat Mixture

  • 1 cup white rice, uncooked
  • 1 tablespoon olive oil
  • cup onion, chopped
  • 1 small jalapeño optional
  • 3 cloves garlic, chopped
  • 1 lb lean ground beef
  • 1 15oz can black beans drained, see notes
  • 1 tablespoon tomato paste
  • ½ teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ¼ cup chipotle peppers in adobo sauce
  • 4 tablespoon water
  • 3 tablespoon fresh cilantro for guac & garnish
  • 1 each avocado
  • cup salsa for topping
  • cup shredded cheese

Cooking Instructions

  • Start to cook the rice according to the package instructions, typically about 20 minutes.
  • Heat olive oil in a skillet or nonstick pan on medium/high heat, then add ground beef and brown for about 5-8 minutes.
  • Add chopped garlic, chopped onion, jalapeño, and tomato paste to browned meat and mix everything together.
  • Blend chipotle peppers and water until smooth, then add to meat mixture along with the drained black beans and let simmer for 2 minutes.
  • In a small bowl, mash avocado with 1 tablespoon of cilantro and a pinch of salt.
  • Assemble the bowls with rice, meat mixture, topped with chopped cilantro, guac, salsa, cheese, and any other preferred toppings.

Notes

Choose ingredients you like; this recipe is very forgiving. Don’t overcook the meat for the best texture. For a low-carb option, you can use cauliflower rice instead of white rice.
