Ingredients
  

Meat and Base

  • 1 pound lean ground beef
  • 1 oz packet taco seasoning
  • ¼ cup water or beef broth
  • 1 cup refried beans optional
  • 2 cups cooked Mexican rice or instant Mexican rice

Burrito Assembly

  • 4 pieces burrito sized flour tortillas
  • 2 cups Fritos or Doritos
  • 1 cup cheese dip warmed, like Tostitos
  • 1 cup shredded Mexican cheese blend
  • ½ cup sour cream
  • 1 serving salsa if desired

Instructions
 

Preparation

  • Cook the beef in a sauté pan until no longer pink. Add the taco seasoning and water, stir, and cook for another minute. Stir in the refried beans.
  • Cook the instant Mexican rice or warm leftover rice. Heat the tortillas in the microwave for 30 seconds.
  • Assemble the burritos by laying a tortilla flat and adding a couple of tablespoons of the meat mixture, followed by rice, fritos, cheese dip, shredded cheese, and sour cream. Fold and roll into a burrito.
  • Serve as is or heat in a pan to toast the outside. Serve immediately with salsa if desired.

Notes

For best taste, serve fresh. Store leftovers in an airtight container in the refrigerator for up to 5 days. To freeze, leave out the Fritos and package individually for up to 3 months. Thaw and reheat as needed.
