Step-by-Step Instructions
In a mixing bowl, combine the shrimp with the sweet chili sauce, soy sauce, minced garlic, and grated ginger. Mix thoroughly, ensuring all shrimp are evenly coated. Cover the bowl with plastic wrap and refrigerate for 15-30 minutes.
While the shrimp is marinating, cut fresh pineapple into bite-sized chunks or drain canned pineapple thoroughly. Set it aside for later.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Add the marinated shrimp in a single layer. Sauté for 2-3 minutes on each side, or until the shrimp turn pink and opaque.
After the shrimp are cooked, add the prepared pineapple chunks to the skillet. Stir gently to combine everything well and let the mixture cook for an additional 2-3 minutes until the pineapple is warmed through.
Remove the skillet from heat and transfer the Sweet Chili Pineapple Shrimp to a serving plate. For added flavor, drizzle with fresh lime juice.
