Ingredients
  

Chicken

  • 4 pieces bone-in, skin-on chicken thighs (2 to 2 ¼ pounds total)
  • 1 teaspoon kosher salt

Sauce

  • ¾ cup sweet chili sauce

Citrus and Ginger

  • 2 medium limes divided
  • 1 inch piece fresh ginger

Cooking Instructions

  • Arrange a rack in the middle of the oven and heat the oven to 400°F.
  • Pat the chicken thighs dry with paper towels and season with salt. Place skin-side down in a skillet and sear for 17 to 20 minutes.
  • Grate the zest from 1 lime into a bowl, juice it, and add grated ginger. Add sweet chili sauce and mix.
  • Transfer the chicken skin-side up to a plate, pour off excess fat, return chicken to skillet and pour glaze over. Roast until cooked through, about 10 to 12 minutes.
  • For extra color, broil for 1 to 3 minutes until glaze bubbles and browns. Serve with lime wedges.

Notes

For best results, use a meat thermometer to ensure chicken reaches 165°F internally.
