Ingredients
  

Marinade

  • 1.5 to 2 pounds boneless, skinless chicken breasts tender and easy to cook
  • 1 cup sweet chili sauce store-bought or homemade; adds sweetness and heat
  • 2 tablespoons soy sauce for a savory depth of flavor
  • 4 cloves garlic minced; for aromatic flavor
  • 1 tablespoon ginger minced; adds warmth and spiciness

Coating

  • ¼ cup cornstarch for coating the chicken to achieve a crispy texture
  • salt and pepper to taste for seasoning the chicken
  • 2 green onions sliced; for garnish and a fresh flavor
  • 1 tablespoon sesame seeds for garnish and a nutty crunch
  • rice or noodles for serving (jasmine rice, basmati rice, or noodles of your choice)

Cooking

  • 2 tablespoons vegetable oil for cooking

Preparation

  • Cut the chicken breasts into bite-sized pieces and marinate them with sweet chili sauce, soy sauce, garlic, and ginger for at least 30 minutes.

Coating the Chicken

  • Prepare the cornstarch, season it with salt and pepper, then coat the marinated chicken pieces evenly.

Cooking the Chicken

  • Heat vegetable oil in a skillet over medium-high heat and cook the coated chicken for 4-5 minutes on each side until golden brown.
  • Transfer cooked chicken to a plate lined with paper towels to drain excess oil.

Glazing the Chicken

  • Add the remaining marinade to the skillet to simmer and thicken, then return the chicken to the skillet to coat with the sauce.
  • Adjust seasoning if desired and combine well.

Serving

  • Plate the chicken, garnish with green onions and sesame seeds, and serve over rice or noodles.

Notes

For best flavor, allow chicken to marinate for up to 2 hours. Store leftovers in an airtight container for up to 4 days.
