  • 2 cups chopped strawberries
  • 2 cups chopped cucumbers I used Persian or mini cucumbers for extra crunch
  • ½ cup crumbled feta cheese high-quality block of sheep’s feta recommended
  • 5-10 leaves fresh basil chopped, depending on size
  • 5-10 leaves fresh mint chopped, depending on size
  • Salt to taste
  • Pepper to taste
  • 2 tablespoon olive oil
  • ½ a lemon juice only
  • ½ teaspoon honey
  • ½ teaspoon white wine vinegar (or apple cider vinegar)
  • ¼ teaspoon garlic powder

Instructions

  • Add all dressing ingredients to a small bowl or jar. Whisk or shake together to combine. Set aside.
  • Add all salad ingredients to a large serving bowl. Pour dressing overtop and toss to combine. Adjust seasonings to taste and serve immediately!

Notes

This salad is best enjoyed fresh. Leftovers can be kept in the fridge for up to a day. Prep ingredients in advance for convenience.
