- 1 large onion, diced
- 1 large red bell pepper, diced
- 4 large garlic cloves, finely chopped
- 1 tablespoon fresh thyme, finely chopped

- ½ teaspoon ground cumin
Heat the oil in a large heavy-bottomed pot over medium-high heat. Add the sliced chorizo and cook for 3-4 minutes until slightly crispy.
