  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a medium mixing bowl, mix together the sourdough discard, Greek yogurt, and grated cheddar cheese until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually pour the dry ingredients into the wet mixture, stirring gently until just combined.
  • Turn the dough out onto a floured surface and knead it lightly until smooth.
  • Roll the dough to about 1-inch thickness and cut out biscuits using a cutter.
  • Brush the tops with melted butter and sprinkle additional cheese or herbs if desired.
  • Bake for 15-20 minutes until golden brown.
  • Let cool on a wire rack for a few minutes before serving.
