Ingredients
  

Vegetables

  • 1 medium yellow onion
  • 3 cloves garlic
  • ½ lb carrots about 4 medium
  • 4 ribs celery

Chicken

  • 2-2.5 lbs split chicken breasts *

Herbs and Spices

  • 1 teaspoon dried basil
  • 1 tablespoon dried parsley
  • ½ teaspoon dried thyme
  • ¼ teaspoon freshly cracked black pepper
  • 1 tablespoon salt or to taste

Liquids and Noodles

  • 8 cups water
  • 6 oz wide egg noodles
  • ¼ cup chopped fresh parsley optional

Instructions
 

Cooking Instructions

  • Chop the onion, garlic, carrots, and celery.
  • Add all the ingredients except the noodles and fresh parsley to the slow cooker.
  • Cook on low for 6-8 hours or until chicken is cooked through.
  • Remove the chicken, shred it, and return it to the soup.
  • Add the egg noodles and cook for an additional 30 minutes on high.
  • Stir in the fresh parsley before serving.

Notes

For added depth of flavor, you can sauté the vegetables before adding them to the slow cooker.
