Ingredients
  

Dry Ingredients

  • 4 cups bread flour or all-purpose flour, plus more for assembly
  • 10-15 grams kosher salt adjust according to preference
  • 1 teaspoon instant yeast

Wet Ingredients

  • 1.75-2 cups lukewarm water adjust according to humidity

Instructions
 

Making the Dough

  • In a large bowl, whisk together the flour, salt, and instant yeast. Add the water and mix until a sticky dough forms.
  • Cover the bowl with a damp tea towel or plastic wrap and set aside in a warm spot to rise for 1 to 1.5 hours or until doubled in bulk.
  • Optionally, perform stretches and folds after 30 minutes of rising.

Baking the Pizzas

  • Preheat the oven to its hottest setting (550°F) with a Baking Steel or pizza stone in place for at least 45 minutes.
  • Turn the dough onto a floured surface, divide into 4 equal portions, and roll each into a ball.
  • Let the dough balls rest for 30 to 60 minutes.
  • Shape the dough into 10-12 inch rounds.
  • Top with desired ingredients and shimmy onto the oven with parchment paper.
  • Bake for about 5 minutes until the top is blistered, then serve.

Notes

Use the dough immediately or refrigerate for up to 5 days. If freezing, store for up to 3 months.
