  • 1 cup barbecue sauce
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup crushed tortilla chips (for topping)
  • sliced green onions or cilantro (optional for garnish)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, barbecue sauce, sour cream, cheddar cheese, frozen corn, cooked rice, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all ingredients are evenly coated.
  • Pour the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  • Sprinkle crushed tortilla chips over the top of the casserole for a crunchy texture.
  • Place the baking dish in the preheated oven and bake for 30-35 minutes or until the casserole is heated through and the cheese is bubbly.
