For the Potatoes
- 1.5 lbs Baby Potatoes Substitute with fingerling or small Yukon Golds if needed
- 3 tablespoon Olive Oil Avocado oil is a great alternative
- 1 tablespoon Dried Oregano Fresh oregano can also be used
- 1 teaspoon Garlic Powder Feel free to swap in 2-3 cloves fresh minced garlic
- Salt Adjust to your personal taste preferences
- Black Pepper Adjust to your personal taste preferences
For the Topping
- 4 oz Feta Cheese Sprinkle over the potatoes during the last 5–10 minutes of roasting
- 2 tablespoon Fresh Parsley Chopped, for garnish
- 2 tablespoon Lemon Juice Use fresh lemon for the best flavor
- 1 tablespoon Lemon Zest
Cooking Instructions
Preheat the oven to 425°F (220°C).
In a large mixing bowl, toss halved or quartered baby potatoes with olive oil, oregano, garlic powder, salt, and black pepper until evenly coated.
Spread the seasoned potatoes on a baking tray in a single layer.
Place the tray in the oven and roast for 30–35 minutes, turning halfway through.
Once golden and tender, sprinkle crumbled feta over the hot potatoes and return to the oven for an additional 5–10 minutes.
Drizzle with fresh lemon juice and zest, and garnish with chopped fresh parsley before serving.
