  • 1.5 lbs Baby Potatoes Substitute with fingerling or small Yukon Golds if needed
  • 3 tablespoon Olive Oil Avocado oil is a great alternative
  • 1 tablespoon Dried Oregano Fresh oregano can also be used
  • 1 teaspoon Garlic Powder Feel free to swap in 2-3 cloves fresh minced garlic
  • Salt Adjust to your personal taste preferences
  • Black Pepper Adjust to your personal taste preferences

For the Topping

  • 4 oz Feta Cheese Sprinkle over the potatoes during the last 5–10 minutes of roasting
  • 2 tablespoon Fresh Parsley Chopped, for garnish
  • 2 tablespoon Lemon Juice Use fresh lemon for the best flavor
  • 1 tablespoon Lemon Zest

Cooking Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large mixing bowl, toss halved or quartered baby potatoes with olive oil, oregano, garlic powder, salt, and black pepper until evenly coated.
  • Spread the seasoned potatoes on a baking tray in a single layer.
  • Place the tray in the oven and roast for 30–35 minutes, turning halfway through.
  • Once golden and tender, sprinkle crumbled feta over the hot potatoes and return to the oven for an additional 5–10 minutes.
  • Drizzle with fresh lemon juice and zest, and garnish with chopped fresh parsley before serving.
