Ingredients
  

Cake Base

  • 1 box Red Velvet cake mix Requires eggs, oil, and water as per package directions.
  • 1 cup coconut Increase or decrease based on preference.
  • 1.5 cups pecans chopped Measure after chopping.
  • 12 oz chocolate chips
  • 8 oz cream cheese
  • 0.5 cup unsalted butter 1 stick
  • 4 cups powdered sugar

Instructions
 

Baking Instructions

  • Preheat oven to 350°.
  • Grease and flour a 9x13” baking dish.
  • Spread pecans, coconut, and then chocolate chips in the bottom of the prepared dish.
  • Mix the cake mix according to package directions.
  • Spread the mixed cake batter over the chocolate chips.
  • Melt butter and cream cheese over low to medium heat in a small saucepan.
  • Remove from heat and add powdered sugar; whisk to combine.
  • Spread the powdered sugar mixture over the top of the cake batter in the baking dish.
  • Smooth the top.
  • Bake for 30 minutes and then tent with foil.
  • Bake an additional 30 to 45 minutes or until the cake tests done.
  • Cool completely before cutting into squares.
  • Store covered tightly.
  • After 2 days, store in the refrigerator.

Notes

This is a high-maintenance cake; please watch closely to ensure proper baking without burning. Grease and flour the baking dish thoroughly to prevent sticking.
