Ingredients
  

Dough

  • 2 ¼ teaspoons Instant Dry Yeast 1 Standard American Package
  • 6 oz Warm Water Check your yeast for temp, usually around 115F/46C
  • 50 grams Granulated Sugar or Caster Sugar
  • 2 tablespoons Butter browned
  • 1 large Egg at room temperature
  • 1 tablespoon Dry Milk Powder
  • 1 teaspoon Salt
  • 5.3 oz Pure Pumpkin Puree Not Pumpkin Pie Filling
  • 1 tablespoon Pumpkin Pie Spice
  • 406-468 grams All-Purpose Flour 3 ¼-3 ¾ Cup

Filling

  • 150 grams Brown Sugar
  • 1 ½ teaspoon Ground Cinnamon
  • 1 ½ teaspoon Pumpkin Pie Spice
  • 3 oz Butter browned

Frosting

  • 4 oz Cream Cheese softened to room temperature
  • 2 oz Browned Butter softened to room temperature
  • 1 tablespoon Pure Vanilla Extract
  • 2 tablespoons Heavy Cream
  • 180 grams Confectioners Sugar or Powdered Sugar

Instructions
 

Brown Butter

  • Brown 15 tablespoons of butter for the dough, filling, and frosting, placing the rest in the fridge overnight.

Dough

  • Dissolve yeast in warm water, let sit for 5 minutes, then mix in sugar, browned butter, egg, milk powder, salt, and pumpkin puree until combined.
  • Add flour and pumpkin pie spice, then mix and knead for 8 minutes until soft and not too sticky.
  • Preheat oven to 200F/93C, turn off, and let dough rise in warm oven for about 1 hour, covered with a towel.

Filling

  • After dough has risen, punch it down and roll into a 16x14 inch rectangle, then brush with melted browned butter and sprinkle with sugar mixture.
  • Roll tightly, cut into 12 pieces, place in baking dish, then let rise overnight or until doubled in size.
  • After rising, preheat oven to 350F/180C and bake for 22-27 minutes, checking temperature reaches 190F/88C.

Frosting

  • Beat cream cheese and browned butter until light and fluffy, then add vanilla, heavy cream, and powdered sugar, beating until combined.
  • Frost cinnamon rolls while warm so the frosting melts into each roll.

Notes

Best served immediately, but can store leftovers in an airtight container for up to 3 days.
