Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground ginger.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the pumpkin puree and vanilla extract until well combined.
  • Beat in the egg until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  • Gently fold in the chocolate chips until evenly distributed.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.

Baking

  • Bake for 10-12 minutes or until the edges are golden brown and the center is set.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for at least 30 minutes before baking. Store in an airtight container at room temperature for up to 3-4 days.
