For the Butter Mixture

  • 0.5 cup unsalted butter very soft
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried Italian seasoning

For the Sandwich

  • 8 slices white bread
  • 12 slices mozzarella cheese
  • 6 ounces pepperoni

For Serving

  • warm pizza sauce for dipping

Preparation

  • Prepare the Butter Mixture: In a medium-sized bowl, mix together the softened butter, Parmesan cheese, garlic powder, and Italian seasoning until smooth.
  • Butter the Bread: Spread the butter mixture evenly over one side of each slice of bread. Lay the bread slices, butter side up, on a sheet tray.
  • Assemble the Sandwich: In a skillet over medium-low heat, place one slice of bread butter side down. Layer on one slice of mozzarella, followed by 6 pepperoni slices, another slice of mozzarella, another 6 pepperoni slices, and a final slice of mozzarella.
  • Top and Cook: Place another piece of bread on top, butter side up. Cook until the bottom is golden brown, about 3-5 minutes. Flip and cook until the other side is golden and the cheese is melted.
  • Serve: Remove from the skillet and serve immediately with warm pizza sauce for dipping.

Notes

This Pizza Grilled Cheese pairs wonderfully with a simple side salad or a bowl of tomato soup. It can also be served with a variety of dipping sauces, such as marinara or ranch.
