Ingredients
  

Peach Filling

  • 1 tablespoon butter softened, to grease baking pan
  • 4 pounds peaches about 8 large, 8-cups sliced
  • cup brown sugar packed
  • ¼ cup flour
  • 2 teaspoons lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • teaspoon ground nutmeg

Cobbler Topping

  • 1 ½ cups all-purpose flour
  • cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 5 tablespoons unsalted butter cut into cubes
  • ¾ cup buttermilk
  • 1 tablespoon granulated sugar
  • ¼ teaspoon cinnamon
  • teaspoon ground ginger

Preparation

  • Set the oven rack to the middle position. Preheat to 425ºF (218ºC).
  • Grease a 9x13-inch baking dish with softened butter. Set aside.
  • Remove the skin from the peaches using a hand peeler. Alternatively, for soft peaches, use the blanch and shock method by cutting a shallow 'X' on the bottoms, submerging in boiling water for 10 to 20 seconds, and then cooling in ice water for 1 minute.
  • Cut the peaches into ½-inch thick wedges and transfer to a large mixing bowl. Add brown sugar, flour, lemon juice, cinnamon, ginger, salt, and nutmeg. Stir to combine.
  • Spread the peach filling evenly in the baking dish. Bake until the filling starts to bubble and lightly thicken, about 15 minutes. Remove from the oven.
  • In a medium bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt. Toss in the cold cubed butter and break into small pieces until it resembles cornmeal. Stir in the buttermilk.
  • Drop about 2 tablespoon-sized mounds evenly on top of the peach filling, about 12 mounds. Combine granulated sugar, cinnamon, and ginger, and sprinkle over the topping and filling.
  • Bake until the topping is golden brown, about 25 to 30 minutes.
  • Cool the cobbler for 20 to 30 minutes before serving.

Notes

For a sweeter filling, add ½ cup of brown sugar. For a thinner filling, use 2 tablespoons of flour. Can use frozen peaches without defrosting. The peaches can be prepared a day ahead and refrigerated for up to 2 days.
