  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt

Wet Ingredients

  • 0.5 cups unsalted butter room temperature
  • 1 cups granulated sugar
  • 3 large eggs
  • 0.5 cups whole milk
  • 2 teaspoon vanilla extract
  • Zest of 1 lemon or orange optional

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
  • In a mixing bowl, beat the unsalted butter and granulated sugar together until the mixture becomes light and fluffy, about 4 to 5 minutes.
  • Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture while alternating with the milk, mixing gently until just combined.
  • Stir in the vanilla extract and the zest of lemon or orange if using.
  • Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.

Notes

Make sure the butter is at room temperature to achieve a creamy batter. Do not overmix once combined.
