  • 4 cups Golden Potatoes Russet or Yukon Gold recommended
  • 2 cups Sharp Cheddar Cheese substitute with low-fat cheese for lighter option
  • 1 cup Crisp Bacon turkey bacon or smoked tempeh for vegetarian
  • 3 cloves Garlic fresh garlic recommended
  • 1 cup Onions yellow or white onions or omit
  • ½ cup Mayonnaise low-fat mayo works well
  • Spices (Salt & Pepper) adjust according to your taste preferences

Optional Topping

  • 1 cup Extra Cheddar Cheese for a gooey layer on top

Preparation

  • Preheat the oven to 350°F (175°C).
  • Prepare the potatoes: Peel and dice them into uniform chunks, then boil in a pot of salted water until tender, about 10-15 minutes.
  • Sauté the onions and garlic in a pan over medium heat until fragrant and translucent, around 3-4 minutes.
  • Combine the drained potatoes with the sautéed onions, garlic, crispy bacon, mayonnaise, and sharp cheddar cheese in a large mixing bowl. Mix until fully blended.
  • Transfer the mixture to a greased baking dish. Layer the top with remaining cheese, then bake for 25 minutes or until bubbly and golden.
  • Serve hot, ensuring everyone enjoys a hearty helping of this comforting dish.
