Soup Base

  • 2 cups sweet potatoes peeled and cubed
  • 1 can chickpeas drained and rinsed
  • 1 cup onions chopped
  • 2 cloves garlic minced
  • 2 medium carrots chopped
  • 4 cups vegetable broth
  • 2 tablespoon olive oil
  • 2 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon ginger
  • to taste salt
  • to taste pepper
  • 2 tablespoon fresh herbs e.g., cilantro or parsley, chopped
  • 1 tablespoon lemon juice freshly squeezed

Cooking Steps

  • Heat olive oil in a large pot over medium heat. Add chopped onions and carrots, and cook until softened. Stir in the minced garlic and cook until fragrant.
  • Add the tomato paste along with cumin, coriander, cinnamon, paprika, and ginger. Stir well to coat the vegetables and let the spices bloom for a minute or two.
  • Add in the peeled and cubed sweet potatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce the heat and let it simmer until the sweet potatoes are tender.
  • Once the vegetables are soft, use an immersion blender to partially blend the soup. Stir in salt, pepper, lemon juice, and chopped fresh herbs just before serving.

Notes

This soup can be adapted by substituting sweet potatoes with butternut squash or pumpkin. For added protein, consider adding shredded chicken or lentils. Coconut milk can make the soup creamier.
