- 3 cloves garlic minced
- 1.5 tablespoons all-purpose flour
- 1 teaspoon Italian seasoning
- 0.5 cup sun-dried tomatoes julienned, packed in oil, drained
- 2 cups chicken broth
- 0.5 teaspoon salt plus more to taste
- 0.5 teaspoon black pepper freshly cracked, plus more to taste
- 1 package (20-ounce) cheese tortellini
- 1 cup heavy whipping cream
- 0.5 cup Parmesan cheese freshly grated, plus more for serving
- 2 cups fresh spinach
- 0.5 teaspoon crushed red pepper flakes optional for garnish
- fresh chopped parsley or basil optional for garnish
Heat the olive oil in a large skillet over medium heat. Add the garlic and cook just until fragrant, about 30–60 seconds.
Stir in the flour and Italian seasoning and cook for about 1 minute, until the flour is fully incorporated.
Add the sun-dried tomatoes, chicken broth, salt, and black pepper. Stir to combine, then bring everything to a gentle simmer over medium-high heat.
Add the tortellini and cook for about 5 minutes, stirring occasionally.
Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Cook for another 2 minutes, until the sauce thickens.
Add the spinach and cook just until wilted, about 1 minute.
Garnish with red pepper flakes, chopped parsley, and extra Parmesan if you like. Serve immediately.
