How to Make Meringue Cookies

  • Preheat Oven to 300°F (150°C) and line baking sheets with parchment paper.
  • In a clean bowl, combine egg whites, cream of tartar, salt, and extract. Beat with mixer until soft peaks form (2-3 minutes).
  • Gradually add half the sugar while continuing to beat until stiff peaks form, then gently fold in remaining sugar.
  • Pipe 1 ½-inch mounds onto lined baking sheets, ensuring space between each mound.
  • Double-pan the sheets and bake for about 20 minutes, then let them dry in oven for 30 minutes.
