- 8 ounces Pasta any shape like spaghetti, penne, or fusilli
For the Sauce
- 3 tablespoons Extra Virgin Olive Oil or light vegetable oil
- 2-3 cloves Garlic minced
- ½ teaspoon Red Pepper Flakes optional for heat optional
- 2 tablespoons Capers in brine
- 1 unit Lemon juice and zest
- 2 tablespoons Fresh Herbs like Parsley or Thyme optional

Step-by-Step Instructions
Cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup of pasta cooking water.
In a skillet, heat olive oil over medium heat, add minced garlic and red pepper flakes, sauté for 2 minutes.
Add lemon zest and juice, capers, and reserved pasta water, simmer for 2-3 minutes to thicken.
Drain pasta and combine with the sauce in the skillet, toss to coat. Add fresh herbs if desired.
