Ingredients
  

Shortbread Crust

  • 1 cup unsalted butter melted
  • ½ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon salt
  • 2 cups all-purpose flour spooned & leveled

Lemon Filling

  • 2 cups granulated sugar
  • 6 tablespoons all-purpose flour
  • 6 large eggs
  • 1 cup fresh lemon juice about 4 lemons
  • 2 teaspoons fresh lemon zest optional
  • confectioners’ sugar for dusting, optional

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C). Line the pan with parchment paper.
  • Make the crust: Mix melted butter, sugar, vanilla extract, and salt. Add the flour and press into the pan. Bake for 20-22 minutes.
  • Make the filling: Sift sugar and flour, whisk in the eggs, lemon juice, and zest.
  • Pour filling over warm crust. Bake for 22-26 minutes until set. Cool completely at room temperature and then chill.
  • Lift out using parchment overhang, dust with confectioners’ sugar, and cut into squares before serving.
  • Freezing Instructions: Freeze bars for up to 3-4 months, then thaw in the refrigerator.

Notes

For neat squares, clean knife between cuts. Store leftovers in the refrigerator for up to 1 week.
