Ingredients
  

  • 2 cups white chocolate pieces High-quality for best results
  • ½ cup heavy cream
  • 5 teaspoons dried culinary lavender Do not over-steep
  • 2 tablespoons honey
  • optional food coloring (violet, blue, or red)
  • 2 cups white chocolate for coating

Instructions
 

  • Heat the heavy cream with lavender over low heat until it just begins to bubble. Remove from heat and let it steep briefly to infuse flavor.
  • Strain the infused cream over white chocolate. Melt gently in short intervals or over a water bath until smooth.
  • Stir in honey and optional food coloring until fully combined and smooth.
  • Transfer the mixture to a dish, cover, and chill until firm and scoopable.
  • Scoop small portions, dust hands with powdered sugar, and roll into smooth balls.
  • Chill again briefly until firm enough to handle.
  • Dip each truffle in melted white chocolate, place on a lined tray, and allow the coating to set.

Notes

Use high-quality white chocolate made with cocoa butter for best results. Do not over-steep lavender to avoid a strong or soapy taste. If the mixture becomes too soft, chill briefly before shaping. Powdered sugar helps prevent sticking while rolling.
