Ingredients
  

Graham Cracker Crust

  • 1.5 cups graham cracker crumbs about 12 full sheet graham crackers
  • 5 Tablespoons unsalted butter melted
  • 0.25 cups granulated sugar

Cheesecake

  • 32 ounces PHILADELPHIA Cream Cheese softened to room temperature
  • 1.125 cups granulated sugar
  • 0.5 cups key lime juice *
  • 0.33 cups sour cream or plain yogurt, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons key lime zest *
  • 3 large eggs at room temperature

Optional Toppings

  • key lime or regular lime slices

Instructions
 

Preparation

  • Adjust the oven rack to the center position, and preheat oven to 350°F (177°C).
  • For the crust, pulse graham crackers in a food processor until fine crumbs. Combine crumbs, sugar, and melted butter in a bowl. Press into a 9-inch springform pan. Pre-bake for 10 minutes and let cool.
  • For the filling, beat cream cheese and sugar until smooth. Add lime juice, sour cream, vanilla, and lime zest, mixing until combined. Add eggs one at a time, mixing until just blended.
  • Pour the filling into the warm crust and smooth the top with a spatula.
  • Prepare a water bath by placing a roasting pan with 1 inch of boiling water in the oven. Place cheesecake on the center rack.
  • Bake for 55-70 minutes. The cheesecake should wobble slightly in the center. Turn off the oven and let it cool in the oven for 1 hour.
  • After cooling, refrigerate for at least 4 hours or overnight.
  • Before serving, loosen the cheesecake from the rim of the pan and top with optional toppings.
  • Slice and enjoy!

Notes

Best served chilled, and leftovers can be stored in the refrigerator for up to 5 days.
