Ingredients
  

For the Crust

  • 1.25 cups almond flour
  • 0.33 cup monk fruit/allulose sweetener
  • 0.25 cup unsweetened cocoa powder
  • 0.25 cup butter, melted
  • 1 whole egg
  • 0.5 teaspoon vanilla extract

For the Cheesecake Layer

  • 8 ounces cream cheese, softened
  • 0.33 cup monk fruit/allulose sweetener
  • 0.25 cup sour cream
  • 0.25 cup heavy cream
  • 1 teaspoon vanilla extract

For the Chocolate Layer

  • 1 batch Keto Chocolate Pudding

For the Topping

  • 1.25 cups heavy cream
  • 2 tablespoons cream cheese, room temperature
  • 0.25 cup monk fruit/allulose sweetener
  • 0.5 teaspoon vanilla extract
  • grated sugar-free chocolate optional

Instructions
 

Prepare the Crust

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, cocoa powder, sweetener, melted butter, egg, and vanilla extract.
  • Mix until well combined.
  • Press the mixture into a 9×9-inch baking dish and prick with a fork.
  • Bake for 13 minutes.
  • Remove from oven and allow to cool at room temperature.

Prepare the Cheesecake Layer

  • In a large mixing bowl, add softened cream cheese and whip briefly using a hand mixer.
  • Add sour cream, heavy cream, sweetener, and vanilla extract.
  • Whip until well combined and smooth.
  • Spread the mixture over the cooled crust using an offset spatula.
  • Chill in the refrigerator for at least 1 hour or until it has firmed up.

Add the Chocolate Layer

  • Prepare the Keto Chocolate Pudding as per recipe instructions.
  • Spread the pudding over the cheesecake layer.
  • Chill in the refrigerator while preparing the whipped topping.

Prepare the Whipped Topping

  • In a mixing bowl, add heavy cream and mix until soft peaks form.
  • Add room temperature cream cheese and vanilla extract.
  • Slowly add sweetener while mixing.
  • Mix until well combined, avoiding overmixing.

Assemble the Dessert

  • Spread the whipped topping over the pudding layer.
  • Chill in the refrigerator for at least 1–2 hours, or until everything has set and firmed up. Chilling overnight is recommended for best results.
  • Before serving, optionally top with grated or shaved sugar-free chocolate or a dusting of cocoa powder.

Notes

Best when chilled overnight for optimal texture.
