Ingredients
  

For the Crust

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 pound baby potatoes, halved
  • 8 ounces green beans, trimmed
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 piece lemon, sliced

Instructions
 

Prepare the Crust

  • Preheat oven to 400°F (200°C). In a large bowl, toss potatoes and green beans with olive oil, minced garlic, thyme, paprika, salt, and pepper.
  • Arrange potatoes and beans on a baking sheet in a single layer. Place chicken thighs on top, skin-side up, and season with additional salt and pepper. Top with lemon slices.
  • Roast for 30-35 minutes until chicken is cooked through (internal temperature 165°F) and potatoes are crispy. Serve hot.
