  • 2 cups finely chopped onions
  • 1 cup peeled and diced carrots
  • 1 cup diced celery stalks
  • 1 cup thinly sliced button mushrooms
  • ½ cup chopped green onions (scallions)

Liquids and Seasonings

  • 6 cups vegetable stock Use quality stock for best flavor
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon soy sauce optional
  • 1 teaspoon sriracha sauce optional
  • sea salt to taste
  • freshly ground black pepper to taste

Instructions
 

Preparation

  • Start by chopping your vegetables. Finely chop the onions; peel and dice the carrots. Chop the celery into uniform pieces. Set these aside in separate bowls.

Sautéing

  • In a large pot, heat some oil over medium heat. Add the chopped onions first and stir gently, until they are translucent. Then add the minced garlic and ginger.

Cooking

  • Add the carrots and celery to the pot. Cook for about five minutes until the vegetables are bright and fragrant.
  • Pour in the vegetable stock and bring to a gentle boil.
  • Add the sliced mushrooms and incorporate the rice vinegar, soy sauce, and crushed red pepper flakes. Stir well.
  • Reduce the heat and let the soup simmer for about 20 minutes. Taste halfway through for seasoning adjustments.

Serving

  • Just before serving, sprinkle in the chopped green onions for added color and crunch. Serve hot, optionally drizzling sriracha for spice.

Notes

Use quality stock for flavor. Caramelize onions slowly for sweetness. You can add a dash of miso paste for umami. Fresh herbs can enhance the flavor. This soup is better the next day.
