Dry Ingredients

  • 300 g All-purpose flour
  • 1.5 teaspoon Baking powder
  • 0.75 teaspoon Cinnamon powder
  • 0.75 teaspoon Nutmeg
  • 0.75 teaspoon Allspice
  • 0.25 teaspoon Salt

Wet Ingredients

  • 500 ml Guinness
  • 1 tablespoon Molasses
  • 2.5 tablespoon Honey
  • 125 g Brown Sugar
  • 1.25 tablespoon Browning
  • 0.5 teaspoon Vanilla
  • 1 Egg
  • 3 tablespoon Butter melted and cooled

  • 1 cup Raisins
  • Glazed cherries

  • Preheat oven to 170C/340F. Add all-purpose flour, baking powder, cinnamon powder, nutmeg, and salt to a bowl. Whisk until well combined.
  • Pour Guinness, molasses, honey and browning, vanilla essence, brown sugar, and melted butter, into a separate bowl and stir until well combined. The brown sugar granules should have disappeared. Next, add the raisins and stir again. Set aside.
  • Add half of the flour mixture to the wet mixture and stir. Then add the remaining flour mixture and stir. Make sure the bun batter is mixed well.
  • Pour the Jamaican bun batter into a greased or lined loaf tin and bake for 60-70 minutes or until done.

Notes

Ensure to let the bun cool before slicing for better texture.
