- 1 loaf Ciabatta or other bread/Baguette
- 6-7 tablespoons Olive oil extra virgin
- 6 Ripe tomatoes chopped
- 1 clove Garlic for rubbing
- a little Fresh basil chopped
- a pinch Salt
- a pinch Pepper
- 50 g Grated Parmesan optional for topping
Preparation
Preheat the oven to 200 degrees Celsius (Umluft).
Remove the seeds from the tomatoes and chop them into small pieces.
Tear the basil leaves and chop them finely.
Slice the ciabatta or other bread/baguette.
Preparation of Bruschetta
Mix the chopped tomatoes and basil with 2-3 tablespoons of olive oil in a bowl. Season with salt and pepper and let it sit.
Brush both sides of the sliced bread with olive oil and bake for about 15 minutes until golden brown.
Rub the warm bread slices with the garlic clove on both sides.
Top the bread with the tomato mixture and optionally sprinkle with grated Parmesan before serving.
