Ingredients
  

  • 1 loaf Ciabatta or other bread/Baguette
  • 6-7 tablespoons Olive oil extra virgin
  • 6 Ripe tomatoes chopped
  • 1 clove Garlic for rubbing
  • a little Fresh basil chopped
  • a pinch Salt
  • a pinch Pepper
  • 50 g Grated Parmesan optional for topping

Preparation

  • Preheat the oven to 200 degrees Celsius (Umluft).
  • Remove the seeds from the tomatoes and chop them into small pieces.
  • Tear the basil leaves and chop them finely.
  • Slice the ciabatta or other bread/baguette.

Preparation of Bruschetta

  • Mix the chopped tomatoes and basil with 2-3 tablespoons of olive oil in a bowl. Season with salt and pepper and let it sit.
  • Brush both sides of the sliced bread with olive oil and bake for about 15 minutes until golden brown.
  • Rub the warm bread slices with the garlic clove on both sides.
  • Top the bread with the tomato mixture and optionally sprinkle with grated Parmesan before serving.
