Vinaigrette
- 1.5 tablespoons olive oil
- 1.5 tablespoons red wine vinegar
- 0.25 teaspoon crushed red pepper flakes
- 1 pinch dried basil
- 1 pinch dried oregano
Sandwich Ingredients
- 2 pieces sub buns (6-inch)
- 75-100 grams provolone cheese about 3 to 4 slices
- 6 slices mortadella
- 8 slices hot capocollo extra lean
- 8 slices genoa salami
- 0.5 cup iceberg lettuce shredded
- 0.25 pieces red onion thinly sliced
- 0.33 cup pickled sliced banana peppers patted dry
- 1 pieces tomato thinly sliced
- 1 pinch salt
- 1 pinch black pepper freshly ground
Preparation
In a small bowl, whisk together the olive oil, red wine vinegar, crushed red pepper flakes, basil, and oregano. Set aside.
Cut buns in half horizontally, while still leaving the two halves attached. Remove some of the interior bread to create a valley for the sub ingredients.
Brush the interior of each bun with the vinaigrette (reserve a little for drizzling over the tomatoes).
Layer on provolone, mortadella, capocollo, salami, lettuce, red onion, banana peppers, and tomato on each bottom bun. Brush with remaining vinaigrette and sprinkle with salt and black pepper. Place the top buns over to form the subs. Cut each sub in half if desired, then serve and enjoy!
