  • 1 lb chicken breast or thighs, cooked and shredded
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 medium potatoes, cubed
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute, until fragrant.
  • Stir in the carrots, potatoes, chicken broth, and water. Mix in the tomato paste, dried thyme, rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.
  • Add the shredded chicken and frozen peas to the pot. Stir to combine and let simmer for another 5–10 minutes, ensuring everything is heated through and flavors meld together.
  • Ladle the stew into bowls and garnish with fresh thyme or parsley. Serve hot, accompanied by crusty bread or warm rolls for a complete meal.

Notes

Substitute or add your favorite vegetables, such as celery, parsnips, or green beans. For extra richness, stir in a splash of cream or a knob of butter before serving.
