For the Pudding
- 5 ounces dates pits removed
- 0.5 teaspoon baking soda helps tenderize
- 0.25 cup boiling water softens dates
- 3 tablespoons unsalted butter room temperature
- 6 tablespoons light brown sugar
- 1 large egg
- 0.5 cup + 2 all-purpose flour
- 0.5 teaspoon baking powder
For the Toffee Sauce
- 0.5 cup unsalted butter (1 stick)
- 1 cup packed brown sugar
- 2 tablespoons milk
- 2 tablespoons heavy cream
- 2 tablespoons corn syrup
- a tiny pinch kosher salt
- 2 tablespoons bourbon
Making the Pudding
Preheat your oven to 350°F (175°C).
Mix the chopped dates with baking soda and boiling water in a bowl; allow to sit for 10 minutes.
Cream together the room temperature unsalted butter and light brown sugar until light and fluffy.
Add 1 large egg to the butter mixture and mix well.
Incorporate the softened date mixture into the butter mix, gently folding it in.
Whisk together the all-purpose flour and baking powder in another bowl; fold into the wet ingredients.
Pour the batter into a greased baking dish and bake for 30-35 minutes.
Prepare the toffee sauce while the pudding bakes.
Drizzle the warm toffee sauce over the pudding after baking.
