Ingredients
  

Dry Ingredients

  • 1.25 cups gluten free flour see note
  • 0.25 cups cane sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt

Wet Ingredients

  • 0.33 cups unsalted melted butter
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon juice
  • 2 large eggs
  • 0.5 cups apples peeled and chopped

For the Glaze

  • 1 cup powdered sugar
  • 0.25 cups unsalted butter melted
  • 1 tablespoon milk
  • 1 teaspoon pure vanilla extract

Instructions
 

Preparation

  • Preheat your air fryer to 375º F for 5 minutes. Leave it closed so it stays warm.
  • While the air fryer preheats, wash and chop your apples into small pieces. It is optional to remove the peels.
  • In a large mixing bowl, whisk together gluten free flour, cane sugar, ground cinnamon, baking soda, and salt.
  • In a microwave-safe dish, warm the unsalted melted butter and add vanilla extract, lemon juice, and eggs. Whisk to blend.
  • Pour the wet ingredients into the dry ingredients and add the chopped apples.
  • Mix the ingredients into a batter. Do not overmix to keep fritters light.
  • Spray parchment paper with coconut oil. Drop balls of apple fritter dough onto it.
  • Cut around each fritter with scissors to allow for even frying.
  • Place the fritters in the air fryer basket and spray the tops with coconut oil.
  • Air fry at 375º F for 10-12 minutes until golden brown.

Glazing

  • In a bowl, mix powdered sugar, melted butter, milk, and vanilla extract to form a runny glaze.
  • Drizzle the glaze over the fritters on a wire rack and let it dry before serving.

Notes

This recipe uses gluten-free flour blends tested with King Arthur and Bob’s Red Mill. Xanthan gum may be added if not included in your blend. Fritters can be kept up to 4 days or 4 months in the freezer. For frying directions, see additional notes.
