Equipment

  • large skillet

Ingredients

Main Ingredients

  • 1 lb ground turkey
  • 4 cups cauliflower florets (about 1 medium head)
  • 4 cloves garlic minced
  • 4 tablespoons butter (56 g)
  • 2 teaspoons fresh thyme chopped (or 1 teaspoon dried thyme)
  • 1 medium onion diced
  • 1 tablespoon olive oil (for cooking)
  • Salt to taste
  • Black pepper to taste
  • ½ cup Parmesan cheese grated (for serving)

Instructions

Preparation Steps

  • Wash and cut the cauliflower into small florets, ensuring they are relatively uniform in size for even cooking.
  • Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent and softened, about 3-5 minutes.
  • Add the ground turkey to the skillet. Break it up with a spatula and cook thoroughly until browned and no longer pink, about 6-8 minutes.
  • Combine the cauliflower florets with the cooked turkey and onion in the skillet. Season with salt and black pepper to taste. Continue sautéing until the cauliflower is tender but not mushy, about 8-10 minutes.
  • Stir in the minced garlic and chopped thyme, cooking for an additional 2-3 minutes until fragrant.
  • Reduce the heat to low. Add the butter and stir continuously until it melts and evenly coats all the ingredients in the skillet.
  • Taste the mixture and adjust salt and pepper if needed. Serve immediately, topped with grated Parmesan cheese for a delicious savory finish.

Notes

To make this dish lower in fat, use a light butter or reduce the amount slightly. Fresh thyme adds the best flavor, but dried thyme works well as a substitute. You can add other seasonings like paprika or chili flakes for a spicier kick. Serve with a side salad or steamed greens for a complete low-carb meal. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
