You can use any flavor of Boursin you like, including the dairy free version of Boursin. To make ahead, spread the Boursin into the bottom of a serving dish and prepare the bruschetta up to 24 hours ahead of time. Cover then store separately in the refrigerator. Spoon the bruschetta mixture over the Boursin just prior to serving. To make crostini, slice a gluten free baguette (or regular baguette if you don’t need to eat GF) into ¼″ slices then arrange on a silpat or parchment paper-lined half sheet pan. Brush both sides with extra virgin olive oil then season lightly with salt and pepper. Bake at 350 degrees for 8-12 minutes, or until the crostini are golden brown, rotating the baking pan and flipping the crostini over halfway through.
