  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa (your choice of heat)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 2 pieces green onions, chopped (for garnish)
  • Fresh cilantro, chopped (for garnish)

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine shredded chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, and sour cream. Mix until well combined.
  • In a greased 9×13 inch baking dish, spread half of the chicken mixture in an even layer.
  • Sprinkle 1 cup of shredded cheddar cheese over the chicken layer.
  • Spread the remaining chicken mixture on top of the cheese layer.
  • Add the remaining cheddar cheese on top of the second layer.
  • Sprinkle crushed tortilla chips evenly over the cheese.
  • Place the dish in the preheated oven and bake for 30-35 minutes, or until bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions and cilantro before serving.
