How to Make Caramel Flan
Prepare the Caramel: In a heavy-bottom saucepan, melt the granulated sugar over medium heat. Swirl gently until it transforms into a beautiful amber color—avoid stirring. Carefully pour the caramel into your ramekins.
Make Custard Mixture: In a mixing bowl, whisk together the eggs, whole milk, sweetened condensed milk, a pinch of salt, and vanilla extract until completely smooth.
Strain Custard: Pour the custard mixture through a fine mesh strainer into another bowl, to catch any lumps.
Bake in Water Bath: Preheat your oven to 350°F (175°C). Place the ramekins in a baking dish filled with hot water. Bake for about 1 hour or until the centers jiggle slightly.
Cool and Chill: Remove the ramekins from the water bath and let them cool. Cover and refrigerate for at least 4 hours, or preferably overnight.
