Ingredients
  

  • 16 ounces crushed pineapple well drained
  • 16 ounces cranberries fresh or thawed
  • 3 cups mini marshmallows
  • ½ cup pecans chopped (or nuts of choice)
  • ½ cup powdered sugar
  • 8 ounces cream cheese at room temperature
  • 16 ounces Cool Whip thawed

Instructions
 

  • Pulse the cranberries into smaller pieces, using a food processor. Some big chunks are OK if you want – just don’t pulverize them.
  • Transfer the cranberries into a medium-sized bowl and mix with the drained pineapple and powdered sugar until well combined. Set aside.
  • Next beat the cream cheese in a bowl until smooth and creamy. Make sure you scrape down the sides and then beat again so there are big chunks in there.
  • Gently fold in the whipped topping with a wide metal spoon.
  • Pour the cranberries mixture into the bowl and mix with the cream cheese. Add the marshmallows and pecans and then fold everything together until all the ingredients are evenly distributed.
  • Refrigerate for at least 4 hours so the flavors can meld together.
  • When you’re ready to serve the cranberry fluff, top with some more nuts and cranberries along with any other toppings and then garnish with fresh herb sprigs for a festive look.

Notes

This cranberry salad is best served the same day, but you can make this recipe up to a day in advance. Make sure the cream cheese is softened to room temperature to ensure a smooth, creamy texture without any lumps. Gently folding the ingredients will maintain the dish's fluffiness. Taste your mixture before chilling and adjust sweetness with additional powdered sugar if desired. Allow the dish to chill for maximum flavor.
