Cooking Ingredients
- 3 tablespoon extra virgin olive oil plus more to serve
- ⅓ cup tomato paste
- 4 medium garlic cloves finely chopped
- 1 tablespoon sweet paprika
- 2 teaspoon dried mint
- 2.5 teaspoon kosher salt
- 1.5 pound boneless skinless chicken thighs
- 1 cup orzo pasta
Cooking Directions
In a large saucepan, combine the oil, tomato paste and garlic. Cook, stirring, until several shades darker.
Add the paprika and mint, then cook, stirring, just until fragrant.
Add the chicken, 7 cups water and 2½ teaspoons salt. Simmer, uncovered, until a skewer inserted into the chicken meets no resistance.
Transfer the chicken to a bowl.
Add the orzo to the pot and cook until al dente.
Shred the chicken.
When the orzo is done, add the chicken and season with salt and pepper.
Serve drizzled with additional oil.
