Batter

  • 3 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon lemon zest

Blueberries

  • 1 cup fresh blueberries

Preparation

  • Preheat the oven to 350°F (175°C). Grease a baking dish.
  • In a mixing bowl, whisk together the eggs, milk, flour, sugar, vanilla extract, salt, and lemon zest until smooth.
  • Pour half of the batter into the prepared baking dish.
  • Add the blueberries evenly over the batter, then pour the remaining batter on top.
  • Bake for 40 minutes, or until the clafoutis is set and lightly browned.
  • Allow to cool for 10 minutes before serving.

Notes

Serve warm or at room temperature. Dust with powdered sugar before serving if desired.
