Ingredients
  

Cheesecake Crust

  • 3 cups plain sweet biscuits You can use graham crackers, superwine, Arnott’s marie biscuits etc.
  • ¾ cup unsalted butter melted
  • 3 tablespoon white granulated sugar

Cheesecake Filling

  • 3 cups cream cheese room temperature
  • 1.5 tablespoon all-purpose flour
  • 1 cup white granulated sugar
  • ½ cup sour cream room temperature
  • 1.5 teaspoon vanilla extract/essence
  • 1 teaspoon fresh lemon juice
  • pinch salt
  • 3 large eggs room temperature
  • 1.5 cups fresh blueberries

Blueberry Topping

  • 2.5 cups fresh blueberries divided into 1 cup (150g) and 1 ½ cups (225g)
  • 2 tablespoon lemon juice fresh
  • ¼ cup white granulated sugar
  • 2 tablespoon water
  • 2 teaspoon cornstarch
  • ¼ teaspoon vanilla extract/essence
  • 1 tablespoon unsalted butter cold

Instructions
 

Preparation

  • Preheat oven to 180°C (350°F) and prepare a 9-inch springform pan.
  • Blend the biscuits in a food processor until fine crumbs form. Mix with melted butter and sugar, then press into the springform pan.
  • Bake the crust for 8 minutes, then allow to cool.
  • In a large bowl, beat cream cheese until smooth, then add flour, sugar, sour cream, vanilla, lemon juice, and salt. Mix until combined, then add eggs one at a time.
  • Gently fold in blueberries and pour filling into crust. Bake for 65 minutes until edges are set.
  • Allow cheesecake to cool in the oven for 30 minutes, then at room temperature for 1 hour. Refrigerate for at least 4 hours.
  • For the blueberry topping, combine 1 cup of blueberries, lemon juice, sugar, water, cornstarch, and vanilla in a saucepan. Cook until thickened, then fold in remaining blueberries and butter.
  • Once set, remove cheesecake from the pan and add the blueberry topping before serving.

Notes

Ensure not to overmix the ingredients to maintain texture.
