For the Crust
- 2 cups Vanilla Wafers Crushed
- ¾ cups Unsalted Butter Melted
For the Blondie Batter
- 1 cup All-Purpose Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Salt Omit if using salted butter
- 1 cup Granulated Sugar Can substitute brown sugar
- 1 package Instant Banana Pudding Mix Use instant, not cook-and-serve
- 2 large Eggs Room temperature preferred
- 1 teaspoon Vanilla Extract Preferably pure
- 1 cup White Chocolate Chips Can use dark chocolate instead
Step-by-Step Instructions
Preheat your oven to 400°F (200°C) and prepare a 9x13 inch baking pan with cooking spray.
Crush the vanilla wafers into fine crumbs and reserve one cup for later.
Mix the remaining crushed vanilla wafers with melted butter and press into the pan.
Bake the crust for 5 minutes until lightly golden.
Whisk together flour, baking soda, salt, granulated sugar, and banana pudding mix.
Combine eggs, melted butter, and vanilla with the dry ingredients until just mixed.
Fold in white chocolate chips and reserved crushed wafers.
Spread the batter over the crust and bake for 15-20 minutes or until set.
Cool for 20-30 minutes before slicing into squares.
