Ingredients
  

Dairy

  • 8 oz Greek feta cheese high-quality block

Pastry

  • 4 sheets filo pastry thawed completely

Fats

  • 3 tablespoons unsalted butter melted
  • 2 tablespoons extra virgin olive oil

Sweeteners

  • 3 tablespoons organic honey thyme or wildflower works best

Seeds and Spices

  • 1 tablespoon toasted sesame seeds
  • 1 pinch dried oregano or fresh thyme (optional)
  • black pepper to taste

Instructions
 

Preparation

  • Thaw the filo pastry in the fridge overnight and cover with a damp towel to keep it pliable.
  • Pat the feta dry with paper towels and optionally slice in half if thick.
  • Sprinkle black pepper and oregano over the feta.

Layering

  • Mix melted butter and olive oil. Lay one sheet of filo on a baking sheet and brush lightly with the mixture.
  • Layer a second sheet on top and brush again. Repeat until you have a stack of four sheets.

Wrapping

  • Place the feta in the center of the pastry and wrap securely like a gift. Flip seam side down.
  • Brush the top and sides with the remaining butter mixture.

Baking

  • Preheat oven to 400°F. Bake for 15-20 minutes until golden brown.
  • Check for puffiness and deep color, adjusting time as needed.

Finishing Touch

  • Drizzle warm honey over the baked pastry and sprinkle toasted sesame seeds on top.
  • Serve immediately while soft inside.

Notes

For a richer flavor, try toasting the sesame seeds and experimenting with different types of honey.
