Ingredients
  

Vegetables

  • 5 large carrots peeled and ends trimmed
  • ¼ cup shelled edamame thawed
  • 2 count green onions thinly sliced

Dressing

  • 2 tablespoons toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 teaspoon fresh ginger finely grated
  • 1 clove garlic minced
  • 1 tablespoon honey or maple syrup
  • a pinch red pepper flakes

Toppings

  • 2 tablespoons toasted sesame seeds

Instructions
 

Preparation

  • Shave the carrots using a Y-peeler to create long ribbons.
  • Grate fresh ginger and garlic until they form a paste.
  • In a jar, combine sesame oil, rice vinegar, soy sauce, honey, ginger, and garlic; whisk until mixed.
  • Toast sesame seeds in a dry skillet over medium heat until golden.
  • Trim and prepare edamame and green onions.

Assembly

  • Toss carrot ribbons with half of the ginger sesame dressing.
  • Add edamame and green onions, and toss gently.
  • Transfer to a serving dish and garnish with toasted sesame seeds.
  • Let the salad chill in the fridge for about 15 minutes before serving.

Notes

This salad tastes better if chilled for a while, allowing flavors to meld.
