Ingredients
  

Crust

  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 teaspoon salt
  • 220 g unsalted butter cold cut into cubes
  • 110 g water

Filling

  • 1000 g apples Pink Lady, Royal Gala or Fuji
  • 75 g unsalted butter
  • 190 g brown sugar
  • 1.25 teaspoon ground cinnamon
  • 1.25 tablespoon cornstarch
  • 0.25 teaspoon salt
  • 2.5 tablespoon water

Assembling

  • 5 tablespoon almond flour or other type of finely ground nuts or breadcrumbs

Painting

  • 1 tablespoon water for washing
  • 3 tablespoon brown sugar

Serving

  • Vanilla Ice Cream or other flavour you prefer

Instructions
 

Crust

  • Place the all-purpose flour, sugar and salt in a large bowl and mix them together.
  • Add the cold butter cut into cubes and mix them in with the flour mixture.
  • Pinch the flour along with the dry ingredients to break it up.
  • Add the water and knead slightly with your hands to incorporate the dough.
  • Refrigerate the ball of dough covered in plastic wrap for 30 minutes or up to 2 days.

Filling

  • Peel, core, and cut the apples into 5mm thick slices and place them in a large bowl.
  • Place the apple slices in a saucepan over medium heat with other filling ingredients.
  • Remove warm apples from the saucepan and let them cool down completely.

Assembling

  • Separate ⅓ of the dough for lattice and refrigerate again.
  • Roll out the rest of the dough until 3mm thick and place it over the pie plate.
  • Sprinkle the base of the pie with almond flour and pour the filling on top.
  • Roll out reserved dough until 2mm thick and cut strips for the lattice.
  • Place strips on the pie and create a lattice pattern.
  • Cut excess dough and crimp the edges.

Baking

  • Paint the lattice and edges with egg wash, then dust with brown sugar.
  • Cover edges of pie with aluminum foil and bake at 180C/350F for 30 minutes.
  • Remove aluminum, bake for another 30 minutes or until golden and bubbly.
  • Let the pie cool before serving.
  • Serve a slice of apple pie with a scoop of vanilla ice cream.

Notes

Let the pie cool down to warm before serving for the best flavor release.
