  • Baking dish
  • Large bowl

Ingredients

  • 1 pound carrots, peeled and sliced
  • 2 tablespoons butter, melted
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the melted butter, honey, brown sugar, salt, pepper, and thyme if using.
  • Add the sliced carrots to the bowl and toss until they are well coated with the honey mixture.
  • Transfer the carrots to a baking dish, spreading them out in an even layer.
  • Bake in the preheated oven for 25-30 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through.
  • Remove from the oven and let them cool slightly before serving.

Notes

For a little extra flavor, try adding a pinch of cinnamon or nutmeg to the glaze. You can cut the carrots into fun shapes for picky eaters. For a savory twist, add balsamic vinegar or substitute maple syrup for honey. Experiment with fresh herbs for added freshness.
